

Blueberry Lemon Crumble Bars

Ingredients for the Cake and Crumble;
2 1/4 Cups All Purpose Flour
3/4 Cup Light Brown Sugar
3/4 tsp. Baking Powder
1/2 tsp. Salt
1/2 tsp. Cinnamon
1 1/2 tsp. Lemon Zest
2 lg. Egg Yolk
1/2 tsp. Vanilla Extract
3/4 Cup Unsalted Butter - room temp, cut into small cubes

Ingredients for the Berry Filling;
3 Cups Fresh Blueberries
3 Tblsp. Lemon Juice
2 Tblsp. All Purpose Flour
2 Tblsp. Granulated Sugar
Preheat oven to 350 degrees.

Spray a 9 X 9 inch baking pan with pan spray.

In a large mixing bowl combine the flour, brown sugar, baking powder, salt, cinnamon, lemon zest, and mix lightly.

Add your egg yolk, vanilla, and butter cubes and mix together until resembles course moist crumbs.

In a separate bowl combine the blueberries, lemon juice, 2 Tblsp. All Purpose flour, and 2 Tblsp. Sugar and toss together until berries are coated and wet.

In the baking pan add 2/3 of the crumb mixture and press into pan lightly to cover the bottom completely.

Add blueberries over the crumb mixture and spread to cover evenly.

Sprinkle the rest of the crumb mixture over the blueberries leaving some in bigger pieces to get a nice 'crumble'.

Place in the oven and bake for 40 to 45 minutes until golden brown, checking after 35 minutes.

Cool for at least 30 minutes before slicing into bars.
