Ingredients

  • 4 medium bullhorn peppers

  • 4 ripe tomatoes, diced

  • 4 cloves of garlic, minced

  • 1/4 cup fresh Italian parsley, chopped

  • 3 tablespoons olive oil

  • Salt and pepper, to taste

  • 1 teaspoon red pepper flakes (optional)

  • Juice of 1 lemon


Instructions

  1. Prepare the Ingredients: Wash the bullhorn peppers and slice them in half lengthwise, removing the seeds. Dice the tomatoes and mince the garlic.

  2. Heat the Olive Oil: In a large skillet, heat the olive oil over medium-high heat.

  3. Cook the Peppers: Add the bullhorn pepper halves to the skillet, cut side down. Sear for about 3-4 minutes until they start to soften and get a nice char. Flip and cook for another 2-3 minutes.

  4. Add Garlic and Tomatoes: Stir in the minced garlic and diced tomatoes. Cook for an additional 5-7 minutes until the tomatoes are soft and the mixture is fragrant.

  5. Season: Season with salt, pepper, and red pepper flakes if using. Stir in the chopped Italian parsley and the lemon juice.

  6. Serve: Remove from heat and transfer to a serving platter. Garnish with additional parsley, if desired, and serve warm.
